  1. Prep: Wash the apples thoroughly, peel them, and remove the core. Chop the flesh into large chunks.
  2. Cooking: Place the chopped apples in a saucepan with a heavy bottom. Add water (50\text{ ml} if apples are juicy, up to 100\text{ ml} if dry). Cover the pot.
  3. Simmer: Simmer over medium-low heat for 15\text{-}20 minutes until the apples are very soft and easily break apart.
  4. Puree: Remove from heat. Drain any excess liquid. Use an immersion blender or food processor to blend the mixture until perfectly smooth and uniform.
  5. Cooling: Allow the applesauce to cool completely to room temperature. Crucial: Always add cool applesauce to batter.
